No Bake Healthy Cheesecake

IMG_3990In honor of National Cheesecake Day, we are making a no bake, healthy cheesecake.  I enjoyed sharing this rich, sweet, yet tangy recipe with Fox News.  This dessert is gluten and dairy free made with real, whole food ingredients.

I know when you think of cheesecake, you might think of  granulated sugar, butter, sour cream, eggs, cream cheese, etc.  But, not for this recipe.

I made my version raspberry, you could forgo the added berries or you could use other berries.  Strawberry or blueberry would be great options.

IMG_3955No Bake Raspberry Cheesecake

Ingredients (for a 7 inch spring-form pan, double for a 9 inch):

Crust:

1/2 cup raw almonds

1/2 cup soft Medjool dates (soak in water to soften, if needed)

¼ tsp salt

Filling:

1 ½ cups raw cashews, soaked in water to soften (2 hours in warm water up to overnight in fridge)

1 tsp vanilla extract

1/3 cup coconut oil, melted

1/3 cup honey

1 cup raspberries (thaw completely if using frozen)

Directions:

Place nuts and dates in a food processor with salt and pulse until well combined and mixture starts to ball up like dough.

Place crust mixture in a spring-form pan (or a pie plate lined with Saran Wrap or simply a plastic tumbler or pretty glass container), press firmly, making sure that the edges are well packed and that the crust is even. Place in freezer to harden.

IMG_3972In a high powered blender add all filling ingredients (except raspberries) and blend on high until creamy and smooth.

Pour about 1/2 or 2/3 (your preference and does not have to be exact) of the mixture onto the crust and smooth with a spatula.

Add the raspberries to the remaining filling and blend on high until smooth and creamy. Pour over the first layer of filling.

Place in freezer until solid.

Remove from freezer prior to serving. If needed, run a smooth, sharp knife under hot water to cut into slices. Top with fresh raspberries.
